Baga is given the delicate treatment here, and a light pressing yields a pale salmon-hued wine. It is made into a sparkling wine via the Champagne method, resulting in something elegant, crisp, mineral and savory with small, fine bubbles. The aging adds texture to the palate, elongating the finish.
