Two of My Favorite Thanksgiving Whites
 
I don't usually do a set of Thanksgiving recos.  One, because I think it's kind of trite, but mostly it's because every single time I've gone to select 'Thanksgiving Picks', my list of things that I think would be delicious for that meal quickly gets way too long.

Selecting five or six wines and positioning them as the wines you must have - usually based on the fact that they're the ones you need to get rid of - seems kinda silly to me.

Everyone's tastes and tables are different, and so too should be your wine selection.

That said, there is a particular set of wines that I personally always include in the box I'm bringing over - the fabulous wines of Cota 45.

My favorite two of these favorite Thanksgiving wines are back...and I'm excited...

Cota 45 is a project of one of Jerez's most knowledgeable and talented winemakers, Ramiro Ibañez.

These are unfortified, lightly oxidized expressions of Palomino, intended to highlight the unique terroirs and spectacular white-chalk soils of three of Sanlucar's 'pagos'.

The Miraflores, which has become the unofficial flagship wine in my mind, comes from three different plots of old vines, with varying levels of chalk and iron, situated near the Atlantic.  This coastal home imbues the wines with a lean, aromatic and elegant nature.  Picture a fresh, chalky/mineral white whose finish, thanks to a few months of light flor exposure, shows just a kiss of nutty, savory, salty oxidative notes, that just mingle so well with the rich earthy flavors of Thanksgiving fare.

The Paganilla, on the other hand, comes from two plots situated more inland relative to the Miraflores sites, and it shows in Paganilla's slightly denser texture.  And, while it retains some of that fresher, coastal brininess, there's also a touch of exotic fruit to it that really expands the mouthfeel before closing with that lovely, savory/salty nuttiness and bracing acidity.  

These are such versatile wines, and, for me, everything about their flavor profile just fits so perfectly on a classic Thanksgiving table...and by classic table...I, of course, mean one packed to the edges with mains and sides of all kinds...

...and, other than perhaps Riesling, no other wines can cover all of those flavors the way these beauties do.
