Gonet's Belemnita is their tête de cuvée vintage blanc de blancs bottling, that spends 10 years minimum on the less...and it's positively gorgeous.  It melds that focused, briny, mineral-driven, laser-like character of Chardonnay from Mesnil-sur-Oger, with a broader, textured, nutty/honeyed profile you get from a mature wine.  Like I said, positively gorgeous...especially with more delicate fare like fine seafood/sushi...
